Gooseberry Jam

Ingredients

  • 1 cup gooseberries
  • 1 cup sugar
  • 2 tablespoons water
  • 1 teaspoon freshly squeezed lemon juice

Instructions

  • Add all ingredients to a small saucepan over medium-high heat
  • When liquid starts to boil and berries begin to soften, gently smash berries with a fork
  • Turn down heat to simmer and continue to stir--so that the mixture does not burn--for about 10 minutes
  • Remove from heat and let cool
  • Serve on toast, with cheese, or on meat
  • Save remaining sauce in the fridge for up to two weeks
