Carrot Cake Energy Bites
These carrot cake energy bites are a tasty treat to fuel your body. Double or even quadruple this recipe for extras to easily reheat later! Roll into balls and store in fridge for a week or freeze and store 6 months to 1 year!
Equipment
- 1 Cutting Board
- 1 Sharp kife
- 1 medium bowl
- 1 Vegetable grater
- 1 Plate
Ingredients
- 1 cup carrots chopped
- 1/2 cup pecans
- 1 cup old-fashioned oats
- 1/2 cup unsweetened shredded coconut
- 1/2 cup golden raisins
- 1 Tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Grate carrots and set aside.
- Chop golden raisins and set aside.
- Use hands to smash and crumble oats, coconut, and pecans into bowl.
- Add the carrots, raisins, maple syrup, vanilla extract, cinnamon and salt to bowl with oats, coconut and pecans.
- Mix everything well. If mixture is too dry, add a little extra maple syrup or a tiny bit of water. If mixture is too wet, roll in coconut.
- Roll into balls and store in fridge for a week or freeze and store 6 months to 1 year.

- Energy balls are easy to customize! Swap maple syrup for honey or 1/4 cup nut butter or try different additions like chocolate chips, apple, ginger, chia seeds, flax, or cranberries.
