Nothing says summer like fresh cherry tomatoes. With that in mind, for week two of our Kid’s Kits program at the Champaign Farmers Market, we’re bringing you a recipe and kit for seasonal Cherry Tomato Basil Bruschetta. Below you’ll find the recipe and video tutorial for preparing the dish.
The program is funded by the Nutrition Incentive Hub as part of a mini-grant to support our nutrition incentive program during COVID-19. The Land Connection and the Champaign Farmers Market are partnering with Champaign-Urbana Public Health District and Common Ground Food Co-op on the project. The project is also in conjunction with Common Ground’s “Cooking with Kid’s” program.
Cherry Tomato Basil Bruschetta

Ingredients
- 1 pint Cherry Tomatoes
- 1 bunch Fresh Basil approximately a handful, chopped or torn
- 1/4 cup Olive Oil 1/8 cup for tomato mixture and the rest for brushing bread
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 3 tbsp Balsamic Vinegar
- 1 clove Garlic peeled and left whole
- 1 Baguette
Instructions
- Preheat the oven to 425°F.
- Slice baguette into 1/2-inch slices and place on a large baking tray. Brush the top of each slice with olive oil.
- Bake the baguette slices until golden brown and crisp, approximately 5 minutes. Once crispy and out of the oven, carefully rub the top of each slice with a whole garlic clove. This will leave a delicious garlic flavor without being too overpowering.
- Slice cherry tomatoes into quarters and add to a medium-sized bowl.
- Drizzle a 1/8 of a cup of olive oil over top of the cherry tomatoes. Add salt, pepper, and balsamic vinegar.
- Stack basil leaves together, thinly slice all together, and stir into tomato mixture.
- Serve the warm toasted bread slices alongside the tomato basil mixture and when ready to eat, spoon tomato mixture on top of the toasted baguette.
