So I am going to skip the pleasantries, and get right to the heart of the matter. Fresh spring food is beautiful. The ingredients pictured here, ramps, asparagus, and Shitake were purchased at Prairie Fruits Farm and Creamery’s on-farm sales a couple of weeks ago. So I thought, why not make the most gourmet pizza ever, and add all of my favorite spring foods as toppings?
Here is what I did:
- I brushed the ramps, shitake, and asparagus with olive oil and salt and put them in the broiler for a few minutes. Then I took them out, cut them up into small pieces and set them aside.
- I increased the oven temperature to 550, and while I waited I stretched my pizza dough into a cast iron pan(the dough that the Common Ground Food Coop sells is amazing!), brushed it with olive oil and spread my tomato sauce on top (my last roasted tomatoes from last year’s garden), and then piled on my broiled veggies and some mozzarella
- I cooked the pizza until the crust was bubbling and brown—10ish minutes?
And there you have it, the best pizza I have EVER made. Now head to the downtown Champaign Farmers’ Market and get some beautiful, fresh vegetables and cheese and make a pizza!
