- 2 Large Spoons

Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey
- 1 lime juice and zest
- 1/2 teaspoon dijon mustard
- 2 large ripe tomatoes or 1 pint cherry tomatoes, diced
- 1 cucumber diced
- 1/4 red onion thinly sliced
- 1/4 cup fresh basil leaves chopped
- salt to taste
- black pepper to taste
Instructions
- Wash and dice the tomatoes and cucumber. Thinly slice the red onion. If using, chop the fresh basil leaves.
- Make the honey-lime dressing: In a small bowl, whisk together the extra-virgin olive oil, honey, lime juice, lime zest (if using), dijon mustard (if using), salt, and black pepper until well combined. Set aside.
- In a large salad bowl, combine the diced tomatoes, diced cucumber, sliced red onion, and chopped basil leaves (if using).
- Season with salt and black pepper to taste.
- Pour the prepared honey-lime dressing over the salad ingredients.
